Recipe of the Day: Mint Green Tea Cupcakes

I tried a new cupcake recipe today. Mint Green Tea Cupcakes. The cupcake itself is just my favorite plain cupcake recipe with a lovely green tea mint cream cheese frosting. YUMMY. You can use your own favorite cake recipe or here’s mine:

Plain Cupcakes

Makes 28-30 cupcakes
1 cup unsalted butter at room temp
2 cups sugar
4 large eggs
2 3/4 cup cake flour
1 1/2 tsp baking powder
1/8 tsp salt
1 cup milk
1 tsp vanilla

Beat butter on high until soft. Add sugar beat on medium high until light and fluffy – about 3 minutes. Add eggs one at a time, beat for 30 seconds between each. Whisk together flour, baking powder and salt. Add to egg mixture mix well. Add milk and vanilla. Mix well again. Scoop cupcake batter into papers about 1/2 – 3/4 full depending on if you want flat tops or rounded tops. Bake for 22-25 minutes or until done.

Mint Green Tea Cream Cheese Frosting
8 ounce cream cheese at room temp
1/2 stick butter at room temp
4 cups confectioners sugar
1 tsp matcha green tea powder
1 tsp vanilla
1/4 tsp peppermint extract
fresh peppermint or lavender flowers for garnish

Beat butter and cheese until creamy, gradually add half the confectioners sugar and green tea powder. Add flavorings and beat until combined, then gradually add the rest of the confectioners sugar until it is the consistancy you prefer.
Frost and garnish as you please. YUMMY!!!

this sounds so nice, but being european I really have problems with these measurement, any idea where I can find conversions so I can try this???

You can just google “conversion cup gram” , thats what I do. here’s a good converter: http://www.gourmetsleuth.com/gram_calc.htm
I actually ended up buying cups, its easier ;) Now Im going to go try these cupcakes, yummy!
