Recipe of the Day: Sour Cream Chicken Enchiladas

This is recipe is from Benjamin. He and his cousin are doing a cooking segment today. I hope to get it uploaded later for you to see.


  • 2 cups grated cheddar cheese
  • 2 cups diced cooked chicken
  • 1/2 cup diced mild onion
  • 1 dozen flour tortillas


  • 2 cans cream of chicken soup
  • 1 cup sour cream
  • 1 can diced green chilies
  • salt to taste

Combine all sauce ingredients and heat until mixture is smooth. Mix cheese, chicken and onion together. Place a spoonful of sauce in each tortilla, add a spoonful of filling mixture. Roll tortillas and place side by side in a 9 x 13 (greased) baking dish. Pour any remaining sauce over the enchiladas. Bake at 350 for 30 minutes or until heated through.YUMMY!

What do you serve with this?

Most of the time a green salad and garlic bread. We will have the video posted later on.

Enveloppes De Salade D’Oeufs (egg salad wraps) today. That boy loves him some egg salad…and thought it would be good wrapped in left over tortillas.

Cousin is going home today and we will miss her. I am sure she will be back for another week before school begins again.
