Belated Birthday Present

From Husband!!! These came today!  OH MY!  How excited am I???


Gotta go cut something!! Oh and Mo liked the cute pillow Michelle gave me!

Recipe of the Day: Apple Slaw

As you know, it is hot as blue blazes here and has been.  No rain for almost two weeks now.  Dry and very HOT.  So this recipe sounded really good to me.  Thought I would make it and maybe bake some chicken for supper.  Too hot for anything too too heavy.

2 Granny Smith apple, julienned
3 tablespoons fresh lime (or lemon) juice
3 cups shredded carrots
1 cup shredded purple cabbage

3 tablespoons extra-virgin olive oil
1 tablespoon finely minced shallot
1 teaspoon salt
1/4 teaspoon ground celery seed

2 tablespoons minced  parsley leaves Toss the apple with 1 TBSP lime juice. Set aside. Put cabbage and carrots in a bowl and cover with boiling water for 5 minutes. Drain and cool slightly. Whisk together oil, shallot, the remaining lime juice, salt, and celery seed; add freshly ground pepper to taste. Toss carrots, cabbage, and apple in a large bowl with dressing & parsley. Serve at room temperature or chilled.


Recipe of the Day:Lime Cookies


1/2 cup butter, softened
1 cup white sugar
2 eggs
3 Tbs grated lime zest
1 teaspoon vanilla
2 1/4 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup confectioners sugar

Beat butter with granulated sugar until light and fluffy; beat in eggs, 1 at a time, zest, and vanilla. In separate bowl, whisk together four, baking powder and salt; stir into butter mixture in 2 additions. Divide dough into thirds. Place each on a sheet of waxed paper; using paper as a guide, roll into 10-inch long log. Wrap in the waxed paper, twisting ends to seal. Refridgerate until firm (about 3 hours or overnight).

Line baking sheets with parchment paper, or grease. Cut dough into 1/4-inch slices; place 1 inch apart on pans. Bake in top and bottom thirds of 350 F oven, rotating and switching pans halfway through, until golden, 12 to 14 minutes.

Spread confectioners sugar in shallow pan. While cookies are still hot, dip in confectioners sugar to coat both sides. Transfer to racks and let cool. Coat again with confectioners sugar.
