Recipe of the Day: Apple Slaw

As you know, it is hot as blue blazes here and has been.  No rain for almost two weeks now.  Dry and very HOT.  So this recipe sounded really good to me.  Thought I would make it and maybe bake some chicken for supper.  Too hot for anything too too heavy.

2 Granny Smith apple, julienned
3 tablespoons fresh lime (or lemon) juice
3 cups shredded carrots
1 cup shredded purple cabbage

3 tablespoons extra-virgin olive oil
1 tablespoon finely minced shallot
1 teaspoon salt
1/4 teaspoon ground celery seed

2 tablespoons minced  parsley leaves Toss the apple with 1 TBSP lime juice. Set aside. Put cabbage and carrots in a bowl and cover with boiling water for 5 minutes. Drain and cool slightly. Whisk together oil, shallot, the remaining lime juice, salt, and celery seed; add freshly ground pepper to taste. Toss carrots, cabbage, and apple in a large bowl with dressing & parsley. Serve at room temperature or chilled.
