Recipe of the Day: Easy Apple Bread

1/2 c. butter room temp
3/4 c. sugar
2 eggs
1 tsp. vanilla
2 c. flour
1 tsp. soda
1/2 tsp. salt
1/3 c. sour milk or orange juice
1 c. chopped cooking apples (no need to peel)
1/3 c. chopped walnuts

In mixer, cream butter and sugar. Add eggs and vanilla. Combine flour, soda and salt. Add to mixture and alternate with liquid. Add apples and walnuts. Turn into greased 9×5 loaf pan. Bake for about 1 hour at 350.

How easy is that??? I think this is what I am making for breakfast Monday morning…Apples on the first day of school is a tradition around here.  

UPDATE ON MY MOM:We don’t have to take my mom the long trip to get much needed two units of blood.  Her doctor arranged to have it done here in our little town at the hospital.  We are both very thankful for that.  And I will just imagine that when she recovers from this little inconvenience she will feel somewhat better/stronger.  I know from being anemic before I had my hysterectomy (a year ago this May)that you feel pretty punkish all of the time.  Just weak and generally drained.  She won’t feel great but she will feel much better I think. I will drop her off about 8 am, get her settled in and then check on her about noon.  She will come home this evening if all goes well.

156 hours – Thanks for asking! I got Mom all settled in and she will be there all day. I came home to get a little work done and then will go back and see her at lunch and then pick her up when she is ready to come home.

i’m so glad they found a solution that’s easier on your mother (and you) ya’ll continue to be in my prayers!
