Am I only making things worse???

I got back home this morning at 6:30 from taking Husband to the airport. I talked to him when he got to Atlanta and then when he made it to Boston. His plane is in flight to Milan and should arrive there between midnight and 1 am. I came home this morning and went back to bed! Slept another 3 hours and when I woke up I started cleaning out my shoppe and storage room…I dont know if I am making things better or worse! But I *think* eventually it wil be much much better. I am probably half through and will be gone tomorrow so I will finish on Wednesday. Then Thursday I hope to sew and sew and sew. I will be putting some ready made aprons in my online shoppe as soon as possible. I thought it best to stay busy today. I am not really okay until I know Husband has made it to work.

Anywho, I am pretty pooped so I am off to bed. I will be posting some recipes and such tomorrow. Until then…here a couple of pictures of treats we made for our Early Thanksgiving.

Update: Should have mentioned there will be doors and drawers! The end corner cabinets will have glass doors. Under the TV will be drawers for DVDs. That’s it for now. Got to finish getting Husband ready to head out.

Recipe of the Day: Christmas Fudge (and our Thanksgiving Menu)

Quick! While I have a moment! I made a batch of this and one chocolate fudge with pecans for Husband to pack in his luggage to take back to Tunisia. YUMMY!

White Christmas Fudge

Line a 8 or 9″ square pan with parchment covering two of the sides (see pic below) and butter the other two sides. This will help you lift the fudge out of the pan to cut it.

  • 2 1/4 cups white sugar
  • 3/4 cup evaporated milk
  • 16 large marshmallows
  • 1/2 tsp salt
  • 1 stick unsalted butter
  • 1 cup white chocolate chips or white chocolate bar cut into small chunks
  • 1 tsp vanilla
  • 1/4 tsp almond extract
  • 1 cup finely chopped pistachios
  • 1 cup chopped dried cranberries

In a heavy saucepan slowly heat a stick of butter, marshmallows, white sugar, salt and evaporated milk. Stir constantly. Increase heat to medium and as soon as mixture boils ( DO NOT stop stirring) start timing and continue stirring for exactly 5 minutes. Remove from heat and add flavorings and chocolate. Stir until chocolate has melted and incorporated. Add nuts and cranberries. Pour into prepared pan and let sit until completely cool.

–well I dont know how long…the recipe I have says weeks but come on, seriously. I have never had it last more than a week! We have been known to lick our fingers and get the last crumbs out of the tin!

Okay, one recipe down…how many to go??? Hundreds!!! I just happened to wake up early enough this morning to get this typed up. I made 7 gallons of Chipotle Party Mix last night. I have so much cooking to do today and tomorrow! But here is the final Thanksgiving Menu:

Appetizers to tide everyone over as they arrive during the afternoon:

  • Stuffed Mushrooms (Prosciutto & Cream Cheese mixture)
  • Canapes (Anchovy and Artichoke)
  • Deviled Eggs with Caviar garnish (I love my eggs!)
  • Chipotle Chicken Wings
  • Sausage Balls
  • Assorted Cookies (Maple Leaf Cut outs, Super Dupers, Peanut Butter Criss Cross, Cream Wafers, Sugar Cookies)

Main Meal:

  • Fried Turkey
  • Spiral Cut Ham
  • Whole New York Strip cooked like a roast in the oven
  • Cornbread Dressing
  • Dirty Rice
  • Mashed Potatoes
  • Green Beans
  • Corn on the Cob
  • Glazed Carrots
  • Fococcia
  • Herb Scones

Desserts

  • Ambrosia
  • Pumpkin Pots de Creme’
  • Coconut Pie
  • Chocolate Cupcakes
  • Cheesecake (plain with various sauces)

I think the first thing I will do this morning is get that cheesecake made, cooled and chilled. Then go from there. I have a list in my notebook of what to do and when. You all keep a holiday notebook right??? Please dont tell me you dont have to write EVERY detail down! I have to or I would never get anything done and on time. Have a wonderful Friday.
