Recipe of the Day: Eggnog Fudge

You asked for it!

Very simple:

Line a 8 or 9 inch square pan or dish with parchment or butter thoroughly.

  • 1/2 stick butter
  • 16 large marshmallows
  • 3/4 cup dairy eggnog -canned or refrigerated
  • 2 1/4 cups sugar
  • 1/2 tsp salt
  • 1 cup white baking chips (put these in your food processor and pulse until broken into small pieces -helps them melt faster White baking chips take forever to melt!)
  • 1 tsp vanilla
  • 1 tsp freshly grated nutmeg

Put first 5 ingredients in a heavy saucepan and cook over medium heat, stirring constantly.  When mixture begins to boil, start timing and boil and stir constantly for 5 minutes.  Remove from heat, add vanilla and white baking chips – stir until chips are melted and mixed in well.  Add 1 tsp freshly grated nutmeg pour into prepared pan.  Cool and cut. Store in a cool dry place in an airtight container.

And Pat in New Brunswick (Welcome Pat!) asked what my husband does.  He works for an energy company and is “stationed” in Tunisia.  He is gone a month and home a month – give or take a few days.
