Recipe: Lemon Pepper Chicken Pasta

Sometimes when Husband asked what we are having for supper, what he is trying to say in a nice way is it is my turn (finally) to cook.  So night before last when he asked I said “I have been wanting to try this pasta dish.  How does that sound?”  Fine.  It sounded fine.  Even after I admitted that I only had it partially concocted in my head.  It actually turned out pretty delish.


I cubed some boneless skinless chicken breasts and sauteed them in a little butter/olive oil combination   with plenty of salt and pepper. In another skillet I sauteed a red bell pepper, 5 green onions, 5 cloves garlic,  and two ribs of celery until tender. While I was doing the veggies and chicken, in a separate pot I cooked the spaghetti and then tossed it in a big bowl with fresh lemon slices (3-4) and butter.

While everything was hot I tossed it all together and served with a toasted baguette and fresh spinach salad.

Lovely, Louisiana!

And its rainy Springtime! I am going to venture into town today and see about picking out some flowers for my window boxes and big pots on my porch.

After our whirlwind (seemingly misguided at times) vacation to Paris and beyond, I am ready to get to something domestic.  Cooking, cleaning, sewing, planting…all the things near and dear to my heart.

I have gotten a couple of emails from kinda “sorry you had to cut your trip short”…believe me we didnt regret the trip at all…just over shot what we were capable of in terms of being away from home.  And I knew going in it was going to be a very VERY big sacrifice for Husband to be gone 3 months, and I wondered how he would fare.  And know we dont have to find out!  And he is already talking about “next trip”, so he is definitely okay with the outcome.

We ran into the city yesterday to let the girls do a little shopping and pick up a few things we needed.  Planning on a big weekend with cooking steaks and visiting with our grown up kids.
