Recipe of the Day: Rachel's Butterscotch Blondies

1/2 cup butter
1 cup butterscotch chips
2/3 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 cups miniature marshmallows
1 cup semisweet chocolate chips (She used mini Hershey Kisses)

Preheat oven to 350 degrees. Grease a 9×13 inch pan.
Using a microwave-safe bowl, melt the butter in the microwave. Pour in the butterscotch chips, stirring occasionally until smooth. Set aside to cool.
In a large bowl, stir together the brown sugar, eggs, and vanilla.
Mix in the melted butterscotch chips, then the flour, baking powder, and salt until smooth.
Fold in the marshmallows and chocolate chips last.
Spread the batter evenly into the prepared baking pan. The batter will barely cover the bottom of the pan.
Bake for 20 to 25 minutes in preheated oven. Cool, and cut into squares.

Hi… back again! Well we made them today and since I am Somersizing (dieting… remember in previous post we all agreed to eat better and healtier… I’m still working on my goal…18 pounds to go… and today wasn’t cheat day! ha ha) I didn’t have any but my family did. I asked them if it was a keeper recipe and after all the moaning and groaning, they replied it was a GOOD KEEPER! So way to go Rachel… it’s a keeper!!
