Recipe of the Day: Charlie Browns sans Peanut Butter

I cannot tell you how good these tasted.  Charlie Browns are one of the few things I miss by being allergic (suddenly I might add) to peanut butter.  These were not as creamy but they sure are a great substitution.

  • 2 cups sugar
  • 5 TBSP cocoa (Rachel thinks they need more)
  • 1/2 cup milk
  • 1/2 cup butter
  • 1/2 cup coconut
  • 3 cups quick oats
  • 1 tsp vanilla

Combine first 4 ingredients in a saucepan and bring to a boil stirring often.  When this comes to a rolling boil, boil for exactly one minute.  Remove from heat and stir in vanilla, then quickly stir in oats and coconut.  Drop by teaspoon onto parchment or waxed paper.  Let set completely.  Store in airtight container.
