Good Friday Morning All!

Thank you all so much for your warm response to my interview with Susan Branch.  I got a little message from her via Twitter:

I was glad about Monday afternoon that I had decided to take a few days and let Susan’s interview post sit front and center at the top of my blog.  I started getting sick on Saturday afternoon and by Monday I felt pretty rough.  I attribute a lot of it to the fact that I had to deliver Jerry to the airport Monday morning and I always feel bad the rest of the day and much of the week.  But this was a special kind of bad.  Sinus bad.  By yesterday morning I was full-fledged ill.  I had stayed in bed crashed on Nyquil for most of Wednesday to no good.  So yesterday morning, the fact that my cats didn’t have one grain of cat food, made me pull myself out of bed and head to Walmart where I not only got cat food but a Neti pot.  And why didn’t I already have one you ask?  I don’t know.  But I know what I am getting everyone for Christmas!  I felt better, much better, within a couple of hours.  This morning, a little stuffy, nothing like I was, but as soon as I am finished writing this post I am going to rinse again.  I have lost 4 days this week so I have to get well and get busy!

As yo know, it is Foodie Friday so I want to leave you with a recipe or two this morning and remind you to check in tomorrow morning when I will announce the winner of Susan Branch’s Autumn Book! Oh and a little something from me!

Now here is my recipe contribution for this lovely, chilly Autumn Friday morning.  What else? Chili!! It’s what’s for supper! Probably served with fritos or maybe cornbread acorns??? I will snaps some pictures for you!

Cold Snap Chili

chili

2 pounds ground beef
One 29 ounce can tomato sauce
One 29 ounce can kidney beans, with liquid
One 29 ounce can pinto beans, with liquid
1 cup diced onion (1 medium onion)
½ cup diced green chili (2 chilies)
¼ cup diced celery (1 stalk)
3 medium tomatoes, chopped
2 teaspoons cumin powder
3 Tablespoons chili powder
1 ½ teaspoons black pepper
2 teaspoons salt
2 cups water

1. Brown the ground beef in a skillet over medium heat; drain off the fat.

2. Using a fork, crumble the cooked beef into pea-size pieces.

3. In a large pot, combine the beef plus all the remaining ingredients, and bring to a simmer over low heat.

4. Cook, stirring every 15 minutes, for 2 to 3 hours.

Serve with corn chips or corn muffins.

Note: For spicier chili, add ½ teaspoon more black pepper. For much spicier chili, add 1 teaspoon black pepper and a tablespoon cayenne pepper. For super hot spicy, add 5 or 6 sliced jalapeño peppers to the pot.

Now if Jerry was only home to make it.  He makes an amazing pot of chili. But I will do my best.

Sorry you are feeling bad Susan. I’m glad you discovered the neti pot they are wonderful. Another product that might interest you is a natural shower gel by Kiss My Face, Cold and Flu it really helps open things up. Get some rest and feel better. The chili sounds fabulous!

Susan! So sorry to hear you haven’t been feeling well. Just wanted to thank you again for all your nice questions and all your REALLY nice readers! I hope that you start to heal soon Susan, I am sure that having to say goodbye, yet again, to your honey, hasn’t helped one bit! That chili looks fantastically delicious. I wish I lived closer so that I could bring you over a pot of chicken soup and pamper you a bit, but I am sure your family is doing their best! I send love and hugs and lots of healing wishes! xxoo
