Gooseberry Patch Early Bird Review Number 2

Don’t you agree? Just beautiful!  And they were a hit. The kids LOVED them.  And yes, I made a gluten free version just for me.  You will find info on that at the end of this post.  Before I get to the recipe, I just want to say I LOVE this cookbook.  I am not kidding when I tell you I have trouble deciding which recipe to review because they are all so appealing.  And on top of the great recipes, I really appreciate the baking tips as well as the helpful equivalency charts in the back.  And I love the double spiral bound style ~ very sturdy! Thanks to Vickie and Jo Ann for another great book and thanks to all those who contributed :)

Pineapple Upside-Down Cupcakes

  • 20 ounce can pineapple chunk, drained and 1/2 cup juice reserved
  • 1/3 cup brown sugar, packed
  • 1/3 cup butter, melted
  • 1 cup all purpose flour
  • 3/4 cup sugar
  • 1/2 tsp baking powder
  • 1/4 cup butter, softened
  • 1 egg, beaten
  • Garnish: maraschino cherries

Pat pineapple dry with paper towels.  In a bowl, combine brown sugar and melted butter, divide evenly into 12 greased muffin cups.  Arrange pineapple chunks over brown sugar mixture.  In a bowl, combine flour, sugar and baking powder.  Mix in softened butter and reserved pineapple juice; beat for 2 minutes.  Beat in egg.  Spoon batter over pineapple, filling each cup 3/4 full.  Bake at 350 degrees for 30 minutes or until toothpick tests clean.  Cool in pan for 5 minutes.  Place a wire rack on top of muffin tin and invert cupcakes onto rack so pineapple is on top.  Cool completely and top with a cherry.  Makes one dozen.

I have often thought of this idea but never tried it, now I don’t have too, thanks! Gonna make these for our Sunday school class, I’m the muffin mama! lol

Pineapple upside down cake is one of our favorites, but we never eat a whole cake – gonna have to try this one!


Oh my goodness! Pineapple anything is a favorite here but these look delicious and thanks for adding the gluten free tip at the end Susan! Love that they are just a serving size which makes it easy to serve to company too!

These look so good. It reminded me of the time my 10 year old son made pineapple upside down cake for my dad’s birthday. That son is now 23, and a vet student in Edinburgh, Scotland. We had him home for 3 weeks this Christmas – his first visit since summer 2009. He goes back on Thursday, and I’m going to make him these before he leaves. MMM this not only looks yummy, but sounds yummy. I was just at the store this weekend and was wanting to buy a pineapple. (We have canned pineapple, but I was hankering for some not in a can to munch on!) I love Gooseberry Patch and can’t wait to get my hands on this new one someday!
