Saturday Baking with Sam & Gooseberry Patch!


The Best Blondies from Gooseberry Patch’s 101 Cupcake, Cookie & Brownie Recipes were a hit today.  They are a do-over as in I am sure we will do them over and over again.  Easy and fast and DELICIOUS!  My little grandson Sam is with us this weekend and he was a big helper.  I hope you will give them a try!

  • 1 cup butter, melted and slightly cooled
  • 2 cup brown sugar, packed
  • 2 eggs, beaten
  • 2 tsp vanilla extract
  • 2 cup all purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup chopped pecans
  • 1 cup white chocolate chips
  • 3/4 cup toffee or caramel baking bits

Line the bottom of a 12 x 9 baking pan with parchment paper.  Spray sides of pan with non-stick vegetable spray and set aside.  In a large bowl mix together butter and brown sugar.  Beat in eggs and vanilla until smooth.  Stir in flour, baking powder and salt; mix in remaining ingredients.  Pour into prepared pan and spread evenly.  Bake at 375 for 30-40 minutes .  Allow to cool in pan before cutting into bars.  Makes 1 dozen.

I would love to be entered into the contest! The brownies look so good. I am starting over with my collection of Gooseberry patch books. When I moved to this small town, the local very small Library did not have any Gooseberry books and had not heard of them! Also a lot of the people who get the books at the library are not able to buy or never heard of the wonderful world of these amazing books. So I donated all my books to them and now they can too enjoy the wonderful world of Gooseberry Patch! Now I have to start all over. One by one. I felt bad for a second after donating the books but then I though..I made alot of people’s day for what I just had done. That made me feel great that I did a good deed for people who cannot spend the extra money to get one. So, I hope that you will enter me in your contest as now I have to start over with getting Gooseberry Patch books. Thank you!

oh wow, these Blondies look seriously good…I love warm Blondies with vanilla ice cream up top…but come to think of it, a good caramel ice cream would be very good too…hmmm…I think I may try these for Valentine’s Day 🙂
