Winner of Gooseberry Patch’s Mom’s Very Best Recipes Cookbook

Now for the last recipe Bubble & Squeak I promised you.  I am making it tonight for our supper and will give you the lowdown tomorrow.  But I didn’t want to postpone the giveaway on my account.  I have been under the weather.  Just a bit ill…cheating on my gluten free diet AND stress likely exacerbated by the fact that Jerry is in Tunisia and that little fact is frying my nerves something fierce.  If and when you make Bubble & Squeak  let me know what you think!  I LOVE cabbage and I love potatoes!  Gotta be good!  I am serving mine with sausage.

Bubble & Squeak

  • 2 cups cabbage, finely shredded
  • 1 onion chopped
  • 3 TBSP butter
  • salt and pepper to taste
  • 2 cups mashed potatoes

Place cabbage in a stockpot; add a small amount of salted water.  Cook over medium heat for 15 minutes; drain well and set aside.  In a skillet, saute onion in butter until tender.  Add cabbage, salt and pepper.  Cook over low heat for 2 minutes.  Fold in mashed potatoes until well blended.  Spoon mixture onto a hot, lightly greased griddle, leaving a 1/2 margin around edge of griddle.  Cook for 20 minutes, turning once until golden on both sides.  Serves 6.

Recipe & Review No. 2 from Mom ’s Very Best Recipes – Chicken Tortilla Soup – YUMMY!!

  • 4 cups chicken broth
  • 2 cups cooked chicken, diced
  • 2 – 15 ounce diced tomatoes drained
  • 1 – 16 ounce can corn, drained
  • 1 – 16 ounce pinto or red beans drained and rinsed
  • 1 1/3 cup salsa
  • 2 TBSP taco seasoning mix
  • Garnish: sour cream, shredded Mexican blend cheese, corn or tortilla chips

Combine all ingredients except garnish in stockpot over medium heat.  Simmer, covered for 30 minutes, stirring occasionally.  Top individual portions with desired garnishes.  Serves 6-8.

Recipe Review Number One from Mom’s Very Best Recipes – Texas Taco Biscuit Bake

Mom’s Very Best Recipes is a real gem!

And this recipe for Texas Taco Biscuit Bake is a winner!  Blue Ribbon Winner!  It is super easy, super fast and delicious.

It is made with ingredients I bet you already have on hand.  That’s another plus.  Now let’s get to the recipe.

  • 1 onion, chopped
  • 2 T oil
  • 2 1/2 pounds ground turkey
  • 2  – 8 ounce cans tomato sauce
  • 6 ounce can tomato paste
  • 1/2 cup salsa
  • 1 1/2 t Italian seasoning
  • 3/4 t dried oregano
  • 1 – 2 t salt
  • 1 cup frozen corn, thawed
  • 1/2 c diced tomatoes, drained
  • 1  1/2 cup shredded Cheddar cheese, divided
  • 10 oz tube refrigerated buttermilk biscuits

In a large skillet over medium low heat, cook onion in oil until tender.  Add turkey and cook until no longer pink, drain.  Add tomato sauce, tomato paste, salsa and seasonings.  Cook and stir for 10-12 minutes until heated through.  Stir in corn, diced tomatoes and 3/4 cup cheese.  Spoon turkey mixture into an ungreased 2 1/2 quart casserole dish.  Top with remaining cheese.

Separate biscuits; arrange around the edge of casserole dish on top of turkey mixture.  Bake uncovered at 350 for 20-25 minutes, until biscuits are golden and turkey mixture is hot and bubbly.  Makes 6-10 servings.  YUM!
