A POM-Tastic Giveaway!

con_bottle_225x450 I have been enjoying POM Wonderful for years.  Kristin from POM Wonderful contacted me a little while ago and asked if I would like to test a new product.  WOULD I??? Of course! Here is the information she sent me:

What would you do with an extra hour in the kitchen? That’s just what you’ll get when you use POM Wonderful 100% Pomegranate Juice Concentrate to create your pomegranate reduction, molasses, and sauces! Normally it can take almost an hour to reduce our POM Juice and the result is delicious, but time consuming. POM Concentrate can help save you time and can be used in most recipes that call for pomegranate juice!

All-natural POM Concentrate has all of the same benefits of our 100% pomegranate juice while making  it easier than ever to include the great POM taste in your cocktails, confections, and other culinary creations. And now getting your daily POM fix is more convenient since you can use Concentrate to make your own juice anytime.

And the great part about this? She sent me a bottle to give away to one of you! It isn’t available in stores but you can order it online at POM Wonderful’s website.

Now this is a quick QUICK giveaway so get your name in.  Just leave me a comment letting me know you want to give this new product a try too and I will add your name to the drawing!  I will draw a winner on Wednesday of this week.  I really can’t say enough good about POM Wonderful.  There is always a bottle in our frig.  I am going to share recipes with you over the next couple of days and direct you to a contest they have going on.  They have teamed up with the American Heart Association and you will definitely want get in on this.  ALL the info is on their website.  But let me say one word: Cupcake.  YEP, it’s a cupcake contest!  WOOT! I am entering for sure!

As I share recipes I will be telling you a little more about POM Wonderful’s great line of products.  Now here is your first recipe:

Pomegranate Pulled Pork (or Beef) Sandwiches

3 lb boneless pork shoulder roast or beef brisket (trim off excess fat)
3/4 cup pomegranate arils (if you have fresh pomegranates available)
1/4 cup tomato sauce
1/4 cup balsamic vinegar (look for pomegranate balsamic vinegar if you are shopping)
1/2 cup pomegranate juice made from 1 1/2 TBSP POM Concentrate and 3 1/4 ounces  water

The seasoning is approximate and to taste of course :)

1 1/2 teaspoons ground ginger
1 1/2 teaspoons chili powder
1 1/2 teaspoons smoked paprika
1 1/2 teaspoon ground chipotle
1 teaspoon freshly ground black pepper
1 teaspoon ground mustard
1/2 teaspoon kosher salt
1/2 teaspoon cayenne pepper (optional or use less)
juice and zest of one lemon
2 onions, chopped
4 cloves garlic

for the spice rub:
2 teaspoons ground ginger
2 teaspoons chipolte
2 teaspoons black pepper
2 teaspoons smoked paprika

Mix the spice rub ingredients together. Rub them on the pork. Sear the pork on each side in a hot, dry, nonstick skillet. Add it and all remaining ingredients to a 4 quart slow cooker. Cook for 8 hours on low. When done, meat should shred easily with a fork. Remove roast from slow cooker. Shred with a fork and set aside. Mash any solid bits of the sauce with a potato masher. Return the pork to slow cooker and toss to evenly coat in sauce. Serve on rolls.

I like to serve cole slaw as a side with this.
