It’s GOOSEBERRY PATCH Review & Giveaway time again!

Oh yeah!


This book is amazing!  I began reading it over the weekend and have tried to get this post finished with photos of a couple of my favorite recipes  but couldn’t wait any longer to tell you about it  – recipes/photos or not!  So check back day after tomorrow for two great recipes from Mom’s Very Best Recipes!  My tardiness only gives you one more chance to get your name in to win this treasure of a cookbook!

I am entering for sure!

As I share recipes I will be telling you a little more about POM Wonderful’s great line of products.  Now here is your first recipe:

Pomegranate Pulled Pork (or Beef) Sandwiches

3 lb boneless pork shoulder roast or beef brisket (trim off excess fat)
3/4 cup pomegranate arils (if you have fresh pomegranates available)
1/4 cup tomato sauce
1/4 cup balsamic vinegar (look for pomegranate balsamic vinegar if you are shopping)
1/2 cup pomegranate juice made from 1 1/2 TBSP POM Concentrate and 3 1/4 ounces  water

The seasoning is approximate and to taste of course :)

1 1/2 teaspoons ground ginger
1 1/2 teaspoons chili powder
1 1/2 teaspoons smoked paprika
1 1/2 teaspoon ground chipotle
1 teaspoon freshly ground black pepper
1 teaspoon ground mustard
1/2 teaspoon kosher salt
1/2 teaspoon cayenne pepper (optional or use less)
juice and zest of one lemon
2 onions, chopped
4 cloves garlic

for the spice rub:
2 teaspoons ground ginger
2 teaspoons chipolte
2 teaspoons black pepper
2 teaspoons smoked paprika

Mix the spice rub ingredients together. Rub them on the pork. Sear the pork on each side in a hot, dry, nonstick skillet. Add it and all remaining ingredients to a 4 quart slow cooker. Cook for 8 hours on low. When done, meat should shred easily with a fork. Remove roast from slow cooker. Shred with a fork and set aside. Mash any solid bits of the sauce with a potato masher. Return the pork to slow cooker and toss to evenly coat in sauce. Serve on rolls.

I like to serve cole slaw as a side with this.
