Winner of Gooseberry Patch’s Mom’s Very Best Recipes Cookbook

The lucky one is: Karla – girlfriend I am sending you an email right now!  Congrats and enjoy your book!

Now for the last recipe Bubble & Squeak I promised you.  I am making it tonight for our supper and will give you the lowdown tomorrow.  But I didn’t want to postpone the giveaway on my account.  I have been under the weather.  Just a bit ill…cheating on my gluten free diet AND stress likely exacerbated by the fact that Jerry is in Tunisia and that little fact is frying my nerves something fierce.  If and when you make Bubble & Squeak  let me know what you think!  I LOVE cabbage and I love potatoes!  Gotta be good!  I am serving mine with sausage.

Bubble & Squeak

  • 2 cups cabbage, finely shredded
  • 1 onion chopped
  • 3 TBSP butter
  • salt and pepper to taste
  • 2 cups mashed potatoes

Place cabbage in a stockpot; add a small amount of salted water.  Cook over medium heat for 15 minutes; drain well and set aside.  In a skillet, saute onion in butter until tender.  Add cabbage, salt and pepper.  Cook over low heat for 2 minutes.  Fold in mashed potatoes until well blended.  Spoon mixture onto a hot, lightly greased griddle, leaving a 1/2 margin around edge of griddle.  Cook for 20 minutes, turning once until golden on both sides.  Serves 6.

Ok, I have to try this.

Did you get my email about getting the darling refrig boxes safely? My email is acting up so I thought I would check!

Yes and I replied! Happy they arrived safe and sound! Enjoy!

Congrats to Karla!

I bet the Bubble and Squeak would be great with some Corned Beef for St. Pat’s dinner!

Still sending prayers for Jerry and his co-workers in Tunsia!

Thank you Becky! And I thought the same thing about adding Corned Beef!

Thanks so much! I received it in record time. We’ve really enjoyed looking through all of the yummy recipes. Can’t wait to make something soon~
