Now for the last recipe Bubble & Squeak I promised you.  I am making it tonight for our supper and will give you the lowdown tomorrow.  But I didn’t want to postpone the giveaway on my account.  I have been under the weather.  Just a bit ill…cheating on my gluten free diet AND stress likely exacerbated by the fact that Jerry is in Tunisia and that little fact is frying my nerves something fierce.  If and when you make Bubble & Squeak  let me know what you think!  I LOVE cabbage and I love potatoes!  Gotta be good!  I am serving mine with sausage.

Bubble & Squeak

  • 2 cups cabbage, finely shredded
  • 1 onion chopped
  • 3 TBSP butter
  • salt and pepper to taste
  • 2 cups mashed potatoes

Place cabbage in a stockpot; add a small amount of salted water.  Cook over medium heat for 15 minutes; drain well and set aside.  In a skillet, saute onion in butter until tender.  Add cabbage, salt and pepper.  Cook over low heat for 2 minutes.  Fold in mashed potatoes until well blended.  Spoon mixture onto a hot, lightly greased griddle, leaving a 1/2 margin around edge of griddle.  Cook for 20 minutes, turning once until golden on both sides.  Serves 6.
