Gooseberry Patch Review 3: Autumn Pork Chop Dinner & Gingersnap Baked Beans

This was ONE DELICIOUS supper from Gooseberry Patch’s NEW Quick and Easy Autumn!!  Of course I didn’t eat the stuffing topping (not gluten free) but the apples and pork chop were moist and delicious as were the gluten free beans!  And the kids all really enjoyed all of it! We had a few cool days last week and this hit the spot! Enjoy!

Autumn Pork Chop Dinner

  • 6 boneless porch chops ( I had bone in and they were fine)
  • 1 T oil
  • 6 ounce pkg chicken flavored stuffing mix
  • 21 ounce can apple pie filling

In a skillet over medium heat, light brown pork chops in oil; drain.  Prepare stuffing according to package directions, set aside.  Spread pie filling in bottom of a 13 x 9 inch baking dish sprayed with non stick vegetable spray.  Top pie filling with pork chops, then stuffing.  Cover with foil.  Bake at 375 for 30 minutes; uncover and bake another 10 minutes or until chops are cooked through.  Serves 6.

Gingersnap Baked Beans

  • 4 slices of bacon, crisply cooked and crumbled
  • 2 16 ounce cans pork n beans
  • 2 T onion, chopped
  • 1/4 cup brown sugar, packed
  • 1/4 cup catsup
  • 3/4 cup gingersnap cookies, crushed

In a large bowl mix together all ingredients.  Spoon into a greased 1 1/2 quart casserole dish.  Bake, uncovered at 375 for 30 minutes or until hot and bubbly.  Serves 6-8.

YAY- both recipes baked at the same temp, and relative the the same amount of time.  I love it when that happens!

My Notes: Since it was just the kids and me, I divided the recipe for the beans and used one can for the gluten free version which was simple enough – used gluten free gingersnaps.  Just remember to check your condiment labels – Plain old Heinz catsup is gluten free.  And since this was a really great recipe, I think when I make my next batch of gluten free stuffing from scratch, I will put a little bag in the freezer to use instead of the stuffing mix. Problem solved!
