Gooseberry Patch’s Quick and Easy Autumn Recipe 4: Spiced Harvest Pancakes

O’MY! O’MY! O’MY! Go tell it on the mountain!  These are amazing! I made them earlier today and put them in the fridge for supper.  We will zap them for a few seconds in the microwave and serve with warmed butter and maple syrup.  But of course I had to try a bite or two! I always make enough pancakes to put in the freezer for a quick breakfast, snack or supper.  If you layer them with parchment squares and slide them in a ziploc bag, you have an extra meal on hand.

gfapplebutterpancakes1Spiced Harvest Pancakes

  • 2 1/2 cups biscuit baking mix
  • 1 cup milk
  • 1 cup apple butter (I can’t tell you how much I LOVE apple butter)
  • 2 T oil
  • 1/2 t ground ginger
  • 1/2 t cinnamon
  • 1/2 t nutmeg
  • 2 eggs beaten

Stir together all ingredients until well blended.  Pour about 1/4 cup* batter per pancake onto a hot griddle that has been sprayed with non-stick vegetable spray.  Cook over medium heat until pancakes start to bubble; flip and cook until golden.  Makes about 1 dozen.


Gluten Free Spiced Harvest Pancakes

Follow the recipe above but substitute gluten free baking mix.  How easy!

gfapplebutterpancakes3*I use my muffin scoop for regular pancakes and my mini scoop for gluten free so I can readily identify them in the freezer…and on the table too!

Oh my goodness, apple butter IN the pancakes?! I love it!

I love to reheat our pancake in the toaster rather than a microwave. I make them about 5 inches round and they fit perfectly. What a perfect pancake flavor~~ apple butter, yum.

I don’t hate April 15. It’s my birthday. This sounds like it will be so good will have to try it soon. I love apple butter and never thought about adding it to pancake batter.

Sounds delicious. I grew up eating Musselman’s apple butter and about a year ago had trouble finding it in my regular grocery stores. Tried the other brands and it just wasn’t the taste that brought back memories. Finally found that Dollar General carries it and at a lower price than I was paying before my store stopped carrying it!
