Hoppin’ Jane from Gooseberry Patch’s 101 Hearty Recipes!


Another yummy one!  It’s under sides but we made a meal of it!

Hoppin’ Jane

  • 4 slices of bacon, coarsely chopped
  • 1/2 c onion, chopped
  • 1/4 c celery, chopped
  • 1/4 c red pepper, chopped
  • 2 cloves garlic, pressed
  • 16 ounce can black-eyes peas, drained
  • 1 1/4 c instant rice, uncooked
  • 1 c water
  • 1 c chicken broth
  • salt and pepper to taste

In a skillet over medium-high heat, cook bacon until crisp.  Remove bacon to drain on paper towels; reserving 2 teaspoons drippings in skillet.  Add onion, celery, bell pepper and garlic to drippings and saute 3 minutes or until softened.  Stir in remaining ingredients; bring to a boil over high heat.  Cover, remove from heat and let stand 5 minutes or until rice is tender.  Garnish with crumbled bacon.  Serves 4.
