New Recipe from Gooseberry Patch’s Fresh from the Farmstand!

m217cs

Chocolate Covered Strawberries

  • 1 lb.  Strawberries
  • 2 2/3 cup milk chocolate chips
  • 2 tsp shortening

Rinse strawberries and pat dry, do not remove leaves.  Insert toothpick into tops of strawberries and set aside.  In a double boiler, combine chocolate chips and shortening.  Stir occasionally until melted and smooth.  Holding strawberries by the toothpicks, dip into chocolate mixture.  Turn berries upside down and insert toothpicks into styrofoam.  Let stand until chocolate sets.

Since I just did these a couple of weeks ago, I hope GBP will understand my using this photo!  I am soo sooo busy right now with baking and Christmas week.  But I did want to show you how lovely chocolate dipped strawberries can look and how they can embellish an otherwise plain ol’ chocolate cake!    BUT I will give you some more from this lovely new book after the holidays.  Promise! I am going to get strawberries when I venture into the madness that is the local grocery and make the Mountaineer Strawberries for our breakfast tomorrow and will get you a pic of them!  And one more chance to win this great cookbook from Gooseberry Patch!

Mountaineer Strawberries

  • 1 cup pancake mix
  • 1/2 cup milk
  • oil for frying
  • 24 strawberries, hulled
  • Garnish: powdered sugar, chocolate sauce or whipped cream

In a bowl, stir together pancake mix and milk until smooth.  In a dutch oven over medium heat, bring 2 inches of oil to 375 degrees.  Dip strawberries in pancake batter.  Deep fry until golden, one to 2 minutes.  Drain on paper towels.  Serve berries dusted with powdered sugar, drizzled with chocolate sauce or dipped into whipped cream.  Makes 2 dozen – YUMMINESS!
