Yummy YUMMY Party-Time Lasagna Buns from Gooseberry Patch’s 101 Soups, Salads and Sandwiches

Okay these were AMAZING last night.  So amazing that I almost didn’t get a picture!  I popped them in the oven, set the time and told Hannah if I wasn’t back from the grocery when the timer buzzed to take them out.  This is what I came home to:

I walked in the back door and said “OH they smell so good!!”  Hannah responds with “whay rrr!!!!”  I am like NOOOO tell me you didn’t eat them all!  I wanted my picture of her sandwich because Ben and mine were on gluten free buns – which are just not as pretty! :)   But oh my doesn’t it look delicious:

Party-Time Lasagna Buns

  • 4 French bread rolls
  • 1 lb ground beef
  • 1.35 oz pkg onion or mushroom soup mix ( I used onion)
  • 1/4 tsp dried oregano
  • 1/4 tsp dried basil
  • 8 oz can tomato sauce
  • 3/4 cup cottage cheese
  • 2 cups shredded mozzarella cheese, divided
  • 1 egg, beaten

Slice the top of each roll and set aside.  Hollow out the rolls. In a skillet over medium heat, brown beef ; drain.  Stir in soup mix, seasons and tomato sauce.  Simmer until heated through.  In a bowl, mix cottage cheese, one cup mozzarella and egg.  For each sandwich, spoon a layer of the beef mixture into the bottom of a bun.  Spoon a layer of cheese mixture and a layer of beef mixture.  Top with remaining mozzarella.  Replace the bun top and wrap in aluminum foil.  Place on a baking sheet and bake at 400 for 30 minutes or until cheese is melted.  Makes 4 sandwiches and serves 4.  UNLESS you have a teenage boy!

You really do have to try these!  Super easy and SUPER delicious!!!

Gooseberry Gives Us Another Beautiful Cookbook! UPDATED: Recipe Book Review

UPDATE: WOW now this recipe is going to be made often around here!  Gooseberry Patch’s Chicken Enchilada Soup is da-bomb! I had company for supper and she loved it too!  Rich, delicious and perfect on this cold wet night!  Happy to have just enough leftover for lunch tomorrow.  THANKS GOOSEBERRY PATCH!!

m668csWowzers!  Another winning cookbook from my friends at Gooseberry Patch!  I again had trouble deciding but your first recipe review is for Chicken Enchilada Soup.  It LOOKS yummy!  And super easy!  Below is the recipe.  I wanted to go ahead with it – such staple ingredients that I thought you might want to try it tonight as well. It is so simple you can whip it up after a long day. I will be posting my review and pictures in the morning!  It’s a cold, wet day here and this is going to be delicious, I just know it!

Chicken Enchilada Soup

  • 1 onion, chopped
  • 1 clove garlic, pressed
  • 1 – 2 tsp oil
  • 14.5 ounce can beef broth
  • 14.5 ounce can chicken broth
  • 10.75 ounce can cream of chicken soup
  • 1.5 cup water
  • 12.5 can chicken, drained
  • 4 ounce can chopped green chilies
  • 2 tsp Worcestershire sauce
  • 1 T steak sauce
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/8 tsp pepper
  • 6 corn tortillas, cut into strips
  • 1 c shredded Cheddar cheese

In a stockpot over medium heat, saute onion and garlic in oil.  Add remaining ingredients except tortilla strips and cheese; bring to a boil.  Cover, reduce heat and simmer for 1 hour, stirring occasionally.  Uncover, stir in tortilla strips and cheese.  Simmer an additional 10 minutes.  Serves 6.
