Yummy YUMMY Party-Time Lasagna Buns from Gooseberry Patch’s 101 Soups, Salads and Sandwiches

Okay these were AMAZING last night.  So amazing that I almost didn’t get a picture!  I popped them in the oven, set the time and told Hannah if I wasn’t back from the grocery when the timer buzzed to take them out.  This is what I came home to:


I walked in the back door and said “OH they smell so good!!”  Hannah responds with “whay rrr!!!!”  I am like NOOOO tell me you didn’t eat them all!  I wanted my picture of her sandwich because Ben and mine were on gluten free buns – which are just not as pretty! 🙂  But oh my doesn’t it look delicious:


Party-Time Lasagna Buns

  • 4 French bread rolls
  • 1 lb ground beef
  • 1.35 oz pkg onion or mushroom soup mix ( I used onion)
  • 1/4 tsp dried oregano
  • 1/4 tsp dried basil
  • 8 oz can tomato sauce
  • 3/4 cup cottage cheese
  • 2 cups shredded mozzarella cheese, divided
  • 1 egg, beaten

Slice the top of each roll and set aside.  Hollow out the rolls. In a skillet over medium heat, brown beef ; drain.  Stir in soup mix, seasons and tomato sauce.  Simmer until heated through.  In a bowl, mix cottage cheese, one cup mozzarella and egg.  For each sandwich, spoon a layer of the beef mixture into the bottom of a bun.  Spoon a layer of cheese mixture and a layer of beef mixture.  Top with remaining mozzarella.  Replace the bun top and wrap in aluminum foil.  Place on a baking sheet and bake at 400 for 30 minutes or until cheese is melted.  Makes 4 sandwiches and serves 4.  UNLESS you have a teenage boy!

You really do have to try these!  Super easy and SUPER delicious!!!

These are delicious! I made them as written first, then made a vegetarian batch for my sister by substituting veggie crumbles (in the frozen vegetarian section at any supermarket) for the ground beef. I also used ricotta cheese the second time instead of the cottage cheese since my husband doesn’t like it.

These look like something a little bit different than the usual sandwich, but easy to make and yummy. I believe we will be trying them soon. It also looks like a recipe that would be easily adapted by using different ingredients for other protein/cheese/sauce combinations.
