Dessert anyone?

HELLLLOOOO Friday!!!! Finally!  These days are dragging by for me.  This time next week, if all goes according to plans, The Husband will be on his way back home.  YAY!  It’s been a long three weeks.

In the meantime, we have some recipes to share and a cookbook to give away!  If you have been following my blog, you know how this works. If not a the bottom of this post will be information about how to enter to win a copy of Foolproof Family Recipes from Gooseberry Patch and all the particulars.

I realized yesterday I hadn’t posted this recipe and it was such a hit! In fact about every two days or so one of the kids asks when are you going to make that Inside-Out cake again???  Soon…soon.   It was so easy and so very delicious.  AND super easy to make gluten free.

Inside-Out Cake

  • 2-3 TBSP sugar
  • 15 1/4 oz pkg. yellow cake mix (I used Betty Crocker’s Gluten Free Yellow Cake mix)
  • 4 eggs
  • 1 cup oil
  • 1 cup water
  • 15 oz can coconut-pecan frosting
  • 1/2 c chopped pecans

Generously spray a 10″ Bundt pan with non-stick vegetable spray.  Dust pan with sugar, set aside.  In a large bowl, combine dry cake mix, eggs, oil and water; beat as directed on package.  Stir in frosting mix and mix well. Fold in nuts.  Pour Batter into pan and bake in a preheated 350 oven for 50-60 minutes.  Let cake cool in pan for 10 minutes only.  Turn out onto serving plate.  Makes 12 servings.

Note: This cake is super moist which is not always easily accomplished with a gluten free cake.  We enjoyed every last crumb.  Take a look at the pictures and then scroll on down for the giveaway info!

It does look good. Cake mixes are not something which is really common over here. I am not sure why that is. This cake looks delicious though! I will have to bookmark it for when I can get my hands on a cake mix!

I don’t know how you do it being separated so often from your hubbie coz of work. I know it’s something which you have to do, but still, you must miss him so much. I am sure it makes you appreciate your time together all the more however, so maybe that’s not an entirely bad thing! xxoo
