Soup anyone?

This soup was a real winner!  Ben and I enjoyed the heck out of it and I dropped a couple of servings off to my oldest son for his lunch today.  Anxious to see what he thought.  Although, he’s the guy who would finish off one of the younger kids plate/bowl/cup to keep from throwing out food.  Many times I said “You know that has baby spit in it, right?” To which he replied “Yeah, it won’t hurt me.”  Okey dokey.  Bleh! They were my kids but I didn’t want to eat after them!  I honestly can’t remember him ever complaining about what the meal was but still, having said all that – This COWBOY SOUP from Foolproof Family Recipes was DELISH!


  • 1-2 pounds ground beef
  • 5.6 ounce pkg Spanish rice mix, uncooked
  • 1 onion, chopped
  • 4-5 c. beef broth
  • 15 oz can mixed vegetables
  • 14 1/2 oz can diced tomatoes
  • 10 oz can diced tomatoes and green chiles
  • 11 ounce can of corn

In a soup pot over medium heat, brown beef with onions: drain.  Meanwhile, prepare rice according to package directions.  To beef mixture in soup pot, add cooked rice, 4 cups broth and undrained vegetables.  Bring to a boil; reduce heat to low. Simmer for about 30 minutes, adding remaining broth if a thinner soup is desired.  Makes 8-10 servings.

Note: I am quite sure a vegetarian version would be “Souper Simple”.

Rats!! We can’t get Spanish Rice mix over here! I will have to source out a copycat recipe I think! This soup looks delicious! I really want to try it. I had a son like your oldest son! Oddly enough he was my oldest son as well. I wonder if it has something to do with being the oldest??? Nice to see you posting more frequently dear friend! xxoo
