Honey! I’m home!!!!

You probably wondered if I was even still alive!  Yep. I am.

And I am home again.  Took a little trip to the great, beautiful, cool state of Vermont.  Had a wonderful time with friends and the family that went with.


I would apologize for being so lackadaisical with my blog but it’s not like I have been sitting around eating bon-bons and watching reruns of Law and Order.  I have been so unbelievably busy and yet wondering if I am accomplishing a thing.   But I have missed all of you who are so faithful to come here to see that well, I’m not here.  And I hate that I have left you all hanging.  Not really fair is it?

We are in the midst of one of the hottest Junes on record here in Louisiana and just yesterday I feel like I have semi-caught up on the outside work that went undone while I was on vacation.  Now I am on to inside work for this next week.  I am destashing patterns, fabric and such in prep for other things.  I will be putting them in my etsy shop and will let you know when they are there.  Maybe something you can use.

Let’s see what else since last we talked?  Oh Jerry’s job has moved him to Singapore/Malaysia.  He is thrilled.  Hopefully he will never have to go back Tunisia.  He was there for all the fun of the revolution and that seem to be the highlight of the  4 years he spent there.

I have a lot of things in the works around here (more excuses).   The Enchanted Kitchen is for reals now.  It is a real live business.  Hopefully one day it will have a real live building.  Lots of things to tell about that but at another time.  But in a nutshell it is a food related project.  Actually a cooking school/personal chef/cookbook business.  Wrap your mind around that!  Yeah.  Hard for me to believe too.  There will be lots of things branching out from it but one little ‘subsidiary’ is “Little Brown Bee – handmade frocks and other needful things”.   Such needful things as aprons,  kitchen and garden stuff and of course beeswax candles, hand creams, crafts and such.  I don’t know if there will be blogs associated with either since I can’t seem to keep up with one 🙂 There is just so much that has to go into getting a business of any kind off the ground and I am not near through trussing up either of these little ventures.

Life is just one crazy thing after another as you all well know.  I won’t even try to tell you I will do better, because frankly, I am doing my best.  Maybe I am getting old.  And slower.  Or maybe I just haven’t been in the mood to share lately.  Who knows?  But I am feeling like I am coming around the bend.  Which is better, I believe, than going around the bend.   Think maybe I meant coming BACK around.  Some days I have felt like I run my crazy train right off the tracks.  And blogging was just not on my list to do.  But here I am today.  Happy Father’s Day to all your dads, husbands, sons etc.  My sweet husband is in Malaysia but will be home to us on Friday if all goes well.  It has been an especially long 5 weeks and I am ready to have my whole family back together.

Hope this finds you all well and staying cool.  Or at least not burning up.  If you have any extra rain, send it my way. I will try to take a few minutes tomorrow and tell you a little more about my very lovely vacation.

Impossible Coconut Pie from Gooseberry Patch’s Quick and Easy Autumn

I am a little later than I wanted to be getting this recipe published but I have 101 things going on this Thursday morning!  I think you know I love pie.  LOVE IT. Wrote a book about it I love it so much!  And this pie recipe I am about to share  is a keeper!    Made in a blender? How much easier could it be? And extra points for making its own crust!!!

I made two versions (another reason it took a little longer) – Sugar Free/Gluten Free Impossible Coconut Pie and the recipe straight out of Gooseberry Patch’s Quick & Easy Autumn.  I have the recipe below for you with notes about how to make it Sugar Free /Gluten Free and also one or the other 🙂

Impossible Coconut Pie

Impossible Coconut Pie (original recipe)

  • 2 cups milk
  • 4 eggs
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup biscuit baking mix
  • 1/4 cup butter, softened
  • 1 cup shredded coconut

Pour all ingredients into a blender; blend for 2-3 minutes.  Pour into a buttered 9″-10″ pie plate.  Bake at 350 for 45 minutes or until set.  Makes 6-8 servings

Gluten Free/Sugar Free Impossible Coconut Pie

  • 2 cups milk
  • 4 eggs
  • 1 cup Splenda for baking
  • 1 tsp vanilla extract
  • 3/4 cup Gluten Free biscuit baking mix
  • 1/4 cup butter, softened
  • 1 cup shredded coconut

Pour all ingredients into a blender; blend for 2-3 minutes.  Pour into a buttered 9″-10″ pie plate.  Bake at 350 for 45 minutes or until set.  Makes 6-8 servings.

MY NOTES: I upped the baking mix in the sugar free/gluten free version.   It needed more dry ingredient.  And it was a good decision.  So you want to consider that if you make the gluten free version.  Also, you could just substitute the gluten free baking mix or just the sugar depending on your dietary needs.

You will notice the top and even the texture looks different on the pies.  They were a little different consistency going in the oven but the outcome on the SF/GF version is very good. I really enjoyed a slice of the SF/GF version for my mid morning snack!
Scrumptious!!!  I put the other away for the kids’ dessert tonight.

I will definitely be making this again!
