WOOT! Gooseberry Patch GiveAway! WOOT!

Okay, here we go!  I am going to try my very best to revive this poor nearly dead blog.  I have seriously missed being out here in the blogging world.  I love connecting with people and seeing all the things we have in common.  Like a big ol’ online hen party with a few roosters who pop by every now and then.  Periodically life grabs us by the napes of our necks, spins us around and drops us in a completely, sometimes chaotic place.  Well, that’s where I have been for almost two years. So many changes.  The constants in my life were there and it seemed I was trying desperately to hold on in a whirlwind of changes. SO, here I am.  Hoping some of you will come back on a regular basis.  And hey, leave me a note and let me know you were here Ü

What better way to get back in the swing of things than a giveaway?  You all know how much I love Gooseberry Patch.  LOVE LOVE.  I have been a friend of Gooseberry Patch for SO many years.  Likely from the beginning, truth be told.  Most of you know how these Early Bird Cookbook Reviews go and how to win your very own copy of  FOOLPROOF FAMILY RECIPES. Oh and a little something from me as well. But, that’s a surprise!

I wish I could draw, paint, make art like the cover of Gooseberry Patch Cookbooks!  Anywho…here’s your first recipe. Brown Sugar Meatloaf - It was scrumptious!

  • 1/2 cup catsup
  • 1/2 cup brown sugar, packed
  • 1 lb ground beef
  • 3/4 cup milk
  • 2 eggs beaten
  • 1 – 1 1/2 t salt
  • 1/4 tsp pepper
  • 1 onion chopped
  • 3/4 cup saltine crackers, crushed (I used gluten free of course)
  • 1 t  Worchestershire sauce

Mix together catsup and brown sugar in a small bowl and set aside.  In a large bowl, combine remaining ingredients; mix by hand and form into a loaf.  Place in a lightly greased 9 x 5 loaf pan (I use a meat loaf pan – you can find one here.  In fact this is the very one I have).  Spoon catsup mixture over meatloaf. Bake uncovered at 350 degrees for one hour.  Serves 8.

What goes with meat better than potatoes?  These Golden Parmesan Potatoes especially!  Super simple is never a bad thing either.

  • 2 pounds new potatoes, quartered
  • 1/4 cup olive oil
  • 1 1/2 t. Italian seasoning
  • 2 cloves garlic, minced
  • 1/3 cup grated Parmesan cheese

In a large bowl, toss potatoes with oil, seasoning and garlic.  Add cheese; mix lightly.  Spread mixture in a lightly greased 15 x 10 jelly roll pan.  Bake, uncovered, at 400 degrees  for 45 minutes, or until potatoes are tender.  Makes 6 servings.

Thoughtful Thursday Part Two-Woo Hoo :)

A much anticipated phone call woke me up 20 minutes ago.  Jerry is on the plan in Paris!  Tunisia is left behind and in a little while if all goes well he will begin his journey back across the big pond and eventually to this little green house some time late this evening.  That of course depends on a lot of different things and people so today will not only be filled with work but me checking his flight, oh say, 50 times maybe?! The work is welcome.  I always tell myself I am going to finish all my work before the day he comes home but maybe I don’t for a very good reason.  What would I do all day if all I had to do was sit and think about him being 30 thousand feet in the air for 12-13 hours?  I think it might be best to be busy.

I also woke up to two great emails from Amy Pennington.  The first being a note saying she was sorry we didn’t get together yesterday to get a little something done up for you all. No worries Amy! Wednesday was evidently wild all over the place!  Wow, what a great reason to be so busy ~ finishing up her second book due out in March 2011! How exciting!  I am going to put my name in now for two copies one for me and one to giveaway here.  The other email was really addressed to you happy peeps!

Now get over there and get that recipe!  Didn’t I tell you it would be wonderful! Woo Hoo!

See you happy folks on the flip side.  Remember to leave a comment to enter the drawing for Amy’s book.
