Speedy Goulash from Gooseberry Patch’s 101 Hearty Recipes – YUMMY!


  • 8 ounce package elbow macaroni, uncooked (I used gluten free – and it was awesome!)
  • 1 lb ground beef (I used venison ’cause that’s what I had)
  • 1 onion
  • 2 cloves garlic
  • 1 T paprika
  • 1 1/2 t ground coriander
  • 1 1/2 t ground cumin (sold me on this…my FAVORITE spice of all time – well neck and neck with cinnamon)
  • 1/4 t nutmeg
  • 14 1/2 ounce can diced tomatoes
  • 3 T sour cream
  • salt and pepper to taste

Cook macaroni according to package directions; drain.  Meanwhile, brown meat in a large skillet over medium heat.  While meat is cooking grate onion and garlic directly into meat (I diced mine).  Add spices and mix well.  When meat is just cooked, drain.  Add undrained tomatoes, warm through.  Stir in sour cream, salt pepper and cooked macaroni, serve immediately.  Serves 6.

THIS IS WONDERFUL in all the right ways!  Super duper easy and fast.  Easy to convert to gluten free.  And delicious!  Past everyone’s taste test.

It’s Gooseberry Patch Giveaway Time Again!!

My friends at Gooseberry Patch have done it again!

101EERA delightful collection of easy breezy, toss together, in a snap, no-fuss recipes!!! My first recipe from this great new collection was all the things a recipe should be from a Gooseberry Patch cookbook! Perfectly easy!!

These really are the easiest!!! I added a couple of pictures to the collage showing how I cut my cinnamon rolls with thread.  This way they don’t get smushed 🙂


Easiest Cinnamon-Raisin Rolls

  • 2 cups biscuit mix
  • 1/2 cup raisins (I used craisins 🙂 )
  • 1/2 cup sour cream
  • 4 T milk, divided
  • 2 T butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup nuts, finely chopped
  • 1/2 tsp cinnamon
  • 1 cup powdered sugar

In a bowl, stir baking mix, raisins, sour cream and 3 T milk just until combined.  Gently smooth dough into a ball on a floured tea towel.  Knead 10 times.  Roll dough into a 12 inch x 10 inch rectangle.  Spread rectangle with softened butter.  Mix brown sugar, nuts and cinnamon.  Sprinkle over dough.  Starting on the long end, roll up dough tightly, pinch edge to seal.  Cut roll into 12 slices.  Place slices, cut side down, in greased muffin cups.  bake at 400 degrees for 15 minutes or until golden.  Stir together remaining milk and powered sugar.  Drizzle over warm rolls.  Makes one dozen.

Gooseberry Patch’s Review and Recipe 5: Pecan Pie Muffins


Okay, I know you may be tired of hearing this but ANOTHER WINNING RECIPE from Gooseberry Patch’s Quick & Easy Autumn!   Seriously delicious.  Seriously quick (and easy).  And super easy to convert to gluten free! I switched up the size tin it called for and used a mini muffin tin.  And they are so rich that two mini muffins was just right for me with my morning coffee.


Pecan Pie Muffins

Regular or Gluten Free

  • 1 cup chopped pecans
  • 1 cup brown sugar, packed
  • 1/2 cup all purpose flour (just substitute your favorite gluten free all purpose flour)
  • 2 eggs
  • 1/2 cup butter or coconut oil melted and cooled slightly

Mix pecans, brown sugar and flour in a large bowl; make a well in the center and set aside.

ppmuffins1aIn a separate bowl, beat eggs just until foam appears.  Stir in butter or oil.  Add to pecan mixture, stir just until moistened. Spoon batter into muffin cups greased only on the bottom, filling about 2/3 full.*

ppmuffins1b Bake at 350 degrees for 20-25 minutes, until golden**.


Promptly remove from muffin tin.  Cool on a wire rack.  Makes 9 ***


In my gluten free version I also added a 1/2 cup chopped dates – a great addition!

* I used a mini muffin tin and lined it with paper muffin cups

** I reduced the baking time to 18 minutes

*** Made 30 mini muffins

I fixed the girls a little box to take to school with them today.  Yes, school is actually college 🙂 Putting the rest in the freezer for snacks later on!
