Gooseberry Gives Us Another Beautiful Cookbook! UPDATED: Recipe Book Review

UPDATE: WOW now this recipe is going to be made often around here!  Gooseberry Patch’s Chicken Enchilada Soup is da-bomb! I had company for supper and she loved it too!  Rich, delicious and perfect on this cold wet night!  Happy to have just enough leftover for lunch tomorrow.  THANKS GOOSEBERRY PATCH!!

m668csWowzers!  Another winning cookbook from my friends at Gooseberry Patch!  I again had trouble deciding but your first recipe review is for Chicken Enchilada Soup.  It LOOKS yummy!  And super easy!  Below is the recipe.  I wanted to go ahead with it – such staple ingredients that I thought you might want to try it tonight as well. It is so simple you can whip it up after a long day. I will be posting my review and pictures in the morning!  It’s a cold, wet day here and this is going to be delicious, I just know it!

Chicken Enchilada Soup

  • 1 onion, chopped
  • 1 clove garlic, pressed
  • 1 – 2 tsp oil
  • 14.5 ounce can beef broth
  • 14.5 ounce can chicken broth
  • 10.75 ounce can cream of chicken soup
  • 1.5 cup water
  • 12.5 can chicken, drained
  • 4 ounce can chopped green chilies
  • 2 tsp Worcestershire sauce
  • 1 T steak sauce
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/8 tsp pepper
  • 6 corn tortillas, cut into strips
  • 1 c shredded Cheddar cheese

In a stockpot over medium heat, saute onion and garlic in oil.  Add remaining ingredients except tortilla strips and cheese; bring to a boil.  Cover, reduce heat and simmer for 1 hour, stirring occasionally.  Uncover, stir in tortilla strips and cheese.  Simmer an additional 10 minutes.  Serves 6.

And she’s back!

I took a bit more of a hiatus than I planned to but it was needed.  But here I sit this rainy, RAINY morning planning another Christmas shopping trip, attending Sam’s school Christmas play where he is a snowman <3 and future blog posts.  And happy news about MORE giveaways here at NotQuiteJuneCleaver.com!  I will be giving away not one but TWO beautiful new Gooseberry Patch Books this month and posting some lovely recipes and reviews for you.  My review of  101 Soup, Salad and Sandwich Recipes. Autumn Respite

I am going to be taking a little Autumn respite.  I have found myself overwhelmed as of late.  And hence the lack of posting.  Blogging is way, way down on my list of things to do.   And as the next three weeks whiz by while am trying to get things tidied up,  cleaned up, caught up and a little fall garden planted, I will excuse myself and do it without worrying about not blogging.  I do think I will find time in the evenings but sadly I don’t.  And blogging should never be a chore or dreadful.  And unless you are getting paid it should never seem like a job.   I have many preparations before Jerry and I leave for our Vermont vacation.  For now I can simply remove “Write a Blog Post” from the list without feeling as though I at least need to write an apology for not writing a post 🙂

I hope you all are looking as forward to Autumn and Winter as much as I am.  And I hope the cooler temperatures arrive soon.
